Bulgur salad with parsley, mint, and vegetables
Recipe for bulgur salad with parsley, mint, and vegetables. It’s a tasty and fresh salad that I serve with many different dishes, since it goes well with everything from lamb to chicken, falafels, and pita bread. I think it’s wonderful for summer barbecue nights or on the Easter table with a leg of lamb, but just as much for everyday meals, with small meatballs, falafels, a chicken breast, or skewers, along with a little hummus, a yogurt dressing, and some pickled red onions, if you have them in the fridge.
Ingredients
Preparation Steps
1) Cook the bulgur according to the package directions and let it cool slightly.
2) Whisk the dressing together and season it well with salt and pepper.
3) Toss the bulgur, vegetables, and herbs together, then mix in the dressing. Let the bulgur salad sit for about half an hour before serving to allow the flavors to meld.
