
Sesame Rolls
These sesame rolls are delicious for breakfast, and they’re easy to bake. The flavor of sesame is wonderful in baked goods, as the tiny seeds add a delicious nutty taste and a crispy crunch to the crust. I add a little sesame to the dough and sprinkle the rest on the crust of these delicious sesame buns.

1) Dissolve the yeast in a bowl of water and buttermilk. Add the whole-grain flour, sesame seeds, and all-purpose flour to the mixture and mix well, preferably using a stand mixer on low speed for 10–12 minutes, until the dough is soft and smooth. Finally, stir in the salt. Place the dough in a clean bowl and cover it with a lid or a plate. Let it rest in the refrigerator overnight, or for 10–18 hours.
2) Remove the dough from the bowl once it has finished rising in the refrigerator. Fold the dough once on a floured surface and cut it into equal pieces. Sprinkle a little sesame seed on the baking sheet for each bun. Place the buns on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with more sesame seeds.
3) Bake the rolls in a preheated convection oven at 180 degrees for 10 minutes. Turn the heat up to 225 degrees and bake for another 8–10 minutes until the rolls are golden, crispy, and delicious.
